Eton mess cheesecake


While I love a baked cheesecake, I also love the ease of making a cheesecake that sets in the fridge – like this one, which I jazz up with beautiful mini meringues and dehydrated strawberries. It’s the kind of dessert recipe I enjoy most, where the cake itself is easy to make, so I can spend lots of time creating the decorations.

200 g Strawberries
15 Strawberries
18 g Strawberry pieces, freeze-dried

50 g Egg whites, free-range
Condiments
1 tsp Lemon juice
1 tbsp Vanilla bean paste

100 g Caster sugar
1 Food colouring, red
115 g Icing sugar
100 g White chocolate
Bread & Baked Goods
250 g Digestive biscuits
Dairy
100 g Butter, unsalted
600 g Cream cheese, full-fat
300 ml Double cream
